Veg Out On This Yummy Wrap!

This goes out to all of our vegetarian readers out there, how amazing does this Grilled Veggie and Hummus Wrap look? We are absolutely dying to try this out and this is one recipe, whether your vegetarian or not, we dare you to try with us. Just staring at this wrap has got our mouths watering! Not only is this quick and easy to make but also incredibly healthy as well. This recipe is an amazing new dish to try including in your meal plan for lunch or dinner. We guarantee you’ll be in love with this tasty wrap. The ingredients are fairly simple, you will need:


  • 4 whole-grain flatbreads
  • 4 slices of red onion (½ inch thick)
  • 2 tablespoons of olive oil (separated onto different spoons)
  • 1 red bell pepper
  • 1 eggplant (cut into ½ inch thick slices)
  • 1 container of plain hummus
  • 1/8 teaspoon of kosher salt
  • ¼ cup of chopped fresh parsley
  • ½ cup of crumbled feta cheese

To begin this savory meal heat up a large grill pan on medium to high heat. Take the one 1 tablespoon out of the 2 you have separated and brush that onto your onions, eggplant, and bell pepper. Place your onions and bell pepper onto the grill pan and cook for a good 3 to 5 minutes on each side until you start noticing your grill marks. Once they’ve cooked for the amount of time said, remove them from the pan and place them to the side. Grab your eggplant and place it onto the pan cooking for 3 to 5 minutes as well. Once you’ve started noticing the grill marks, remove your eggplant from the pan and begin to chop up your vegetables. Combine your vegetables, your 1-tablespoon of oil remaining, your parsley and salt and toss vigorously to mix your combination together. Now, spread about ¼ cup of hummus onto each of your flatbreads while dividing the vegetables onto each flatbread. Top your veggies off with about 1 tablespoon of feta cheese, roll up these bad boys, chop them diagonally and prepare your taste buds for quite the meal.
