Please Your Tastebuds with some Chicken Quesadillas

Who doesn’t love a good chicken quesadilla? We know we do! This deliciously savory meal is perfect for the family. Put down the Chinese or Pizza menus and whip up some of these bad boys that will have your family chowing down. These perfectly triangular shaped yums are great appetizers at parties and family BBQ’s. The recipe is simple and the wait is definitely worth it. To cook yourself up some chicken quesadillas you will need:


  • 10 flour tortillas
  • 2 red bell peppers (chopped)
  • 2 green bell peppers (chopped)
  • 1 pound skinless, boneless chicken breast (diced)
  • 1 onion (chopped)
  • 1 tablespoon of vegetable oil
  • 1 tablespoon of bacon bits
  • 1 package of shredded cheddar cheese
  • 1 package of shredded Monterey Jack cheese
  • 1 packet of fajita seasoning



Start by preheating your broiler and grabbing a (greased) baking sheet. Mix your chicken into your fajita seasoning and spread out onto the baking sheet. Place under your broiler while they cook for about 5 minutes. Best way to tell if they are done is to check if the chicken pieces are no longer pink in the middle. Head on over to your oven and preheat for 350 degrees Fahrenheit. Grab a large saucepan of your choice and heat the oil on medium heat. Toss in the green and red bell peppers, the chicken, and the onions. Stir for about 10 minutes until everything looks softened and cooked. Take your tortillas and layer one half with your chicken and veggies. Get some of your Cheddar and Monterey Jack cheese, your bacon bits, and sprinkle that onto the tortilla. Fold your tortillas while you place them onto a baking sheet; pop them in the oven for a good 10 minutes so all of the cheese can melt. Once out of the oven this amazingly scrumptious meal is ready to be served.
