Honey Roasted Veggies

According to most studies, we’re supposed to consume about 3 -4 servings of veggies every day. Veggies are crucial to our nutrition, to our health, and our well being. However, it’s not always easy to eat as many vegetables as we’re supposed to. We frequently run out of different ways to prepare them and it can be boring to eat the same salad every day. That’s exactly why you should try this delicious and healthy recipe. Honey roasted veggies are savory and sweet at the same time and are perfect on their own or with your main dinner. Here’s what you need to prepare them:

1/2 cup of carrots

1/2 cup of chopped green and red bell peppers

1/2 cup sliced of mushrooms

1 cup of diced potatoes

1.5 tablespoons of honey

2 tablespoons of olive oil

2 tablespoons of salt (use sea salt if available!)

Sprigs of thyme and rosemary


After you’ve washed and cut up all of your vegetables, make sure to dry them thoroughly and place them in a large bowl. Add in the olive, thyme, rosemary and salt and mix together well. Preheat your oven to 350 degrees Fahrenheit. Once the oven has heated up, line a baking sheet with foil paper or parchment paper and spread your vegetables in an even layer. Bake in the oven for around 20 – 25 minutes and remove when the vegetables have a golden brown color and are cooked all the way through. Place your vegetables in a bowl and coat them with honey. Make sure to taste them to see if they need any additional seasoning or honey. If you want your veggies to be on the sweeter side then add more honey! Place them back in the oven for another few minutes after you’ve added the honey. Make sure to keep an eye on them so that they don’t burn. Remove after 2 – 3 minutes. Your delicious veggies are ready to be served!
