Girls, we all have those days where it seems like nothing is going right and the only way to cheer is up is by indulging ourselves. What’s a better way to indulge than by having a sweet, decadent and delicious cookie? Oatmeal raisin cookies are a universal favorite. They’re easy to make, rich in flavor and make your whole house smell incredible. On days where you’re feeling down they’re the perfect pick me up. If that hasn’t convinced you to try making them yet then hopefully the simple list of ingredients and quick process to put them together will! To start with here’s what you’ll need (these amounts will get you about 16 cookies)
1 cup of flour
1 stick of butter
1/2 cup of regular white sugar
1/2 cup of brown sugar
1 teaspoon of vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon of salt
1.5 cups of quick quick oats
1 cup of walnuts
The best part about baking these cookies is that you only need one bowl! That’s not something you can get away with for most cookie recipes. Begin making your dough by creaming your butter and sugar together. Use a large bowl so that you can fit all of your ingredients in there. You can cream the butter and sugar by hand. It helps if your butter is soft so leave it out for a few hours beforehand. You can also throw it in the microwave for 15 seconds to get it softened up.
Cream the butter and sugar until they have completely mixed together. It shouldn’t feel grainy at all. Then add in your egg and mix until the egg has been incorporated. Next, add in your teaspoon of vanilla. Once the vanilla has been mixed, add in your one cup of flour, baking soda, and salt. Combine thoroughly until your dough forms. Once you have combined everything together well add in your oats and nuts and mix once again.
This next step is imperative so please don’t skip over it when making your cookies. Chill your dough in the fridge for at least one hour (longer if you can wait). This is imperative to having a good cookie with a soft center. Otherwise your cookies will flatten and become brittle.
Once your dough has chilled make two inch balls and lay onto a greased baking sheet. Bake at 375 degrees Fahrenheit for 10 – 12 minutes and voila, your cookies are ready to eat!
